Introduction

Ingredients

    Whites from 2 large eggs
    3/4 cup uncooked old-fashioned oats
    1 1/2 lb. extra-lean ground beef
    1 package 10oz frozen chopped spinach, thawed and squeezed dry
    1/2 cup chopped onion
    1 TBS Dijon mustard
    1 tsp dried thyme leaves
    1 tsp salt
    1/2 tsp pepper

Directions

Preheat oven to 350 degrees.
In large bowl, mix egg whites, 3/4 cup water and oats. Let stand 5 minutes.
Add remaining ingredients and mix with wooden spoon until blended.
Press mixture into 9 x 5 x 3 inch loaf pan. Bake 50-60 min. until meat loaf is no longer pink in the middle.
Remove from oven, cover loosely with foil and let stand 10 minutes. Drain off juices in pan before serving.
