Introduction

This is a very easy, tasty, low-calorie soup that I absolutely love to eat during the winter months. This is a very easy, tasty, low-calorie soup that I absolutely love to eat during the winter months.

Ingredients

    2 medium leeks, sliced
    4 medium carrots, sliced
    250g swede, cubed
    2 stock cubes
    1 tsp oregano
    2 litres water
    Salt & pepper, to taste

Directions

Slice up the vegetables, place them in a pot with the stock cubes, herbs & seasoning and water. Bring to the boil and simmer for 20-30 minutes.
