Introduction

Ingredients

    1 kg Greenshell Muscells
    1 tbsp olive oil
    3 cloves garlic finely chopped
    3 tbsp onion finely chopped
    1 tbsp minced ginger
    2 tbsp fish sauce
    150 ml dry white wine
    1 finely sliced red chilli (seeds removed)
    3 tbsp sweet chilli sauce
    1 cup coarsely chopped fresh basil and mint
    1 cup sliced red and/or orange pepper
    2 pkg singapore or hokkien fresh noodles (soaked 5 min in hot water)

Directions

Serves 4 mains

Fry garlic, onion and ginger in oil until golden. Add fish sauce, wine and chilli. Add mussels, cover and simmer for 5-8 min. Add sweet chilli sauce and 3/4 cup of chopped herbs. Add pepper and noodles. Cover and simmer until heated through. Serve with remaining herbs.
