Introduction

Ingredients

    Ortega Spanish Rice Mix with seasonings
    3 cups water
    2 T olive oil
    1 can spicy diced tomatoes with chili pepper
    1 can black beans
    4 Turkey sausage patties - I used Bowmes and Landes and it looks like hamburger patties.

Directions

I mixed the first five ingredients together in a pan and let it come to a boil. Then turn it to simmer and continue cooking for 20 minutes. While that was cooking, I sauteed the sausage, then ran it under water and drained it. I chopped the sausage up fine and added that to the rice to finish simmering. I stirred it every 5 minutes.

I served this with tortilla chip strips on top and my husband and son loved it. I also served a romaine lettuce salad.
