Ingredients

Cooking Spray
1 Large Onion - Chopped
1 Large Green Pepper - Chopped
Garlic - Chopped (I used 4 T, but you can use more or less to taste - this makes it pretty garlic-y)
About 6t of salt – divided
1 pound extra lean (grass fed) ground beef
1 pound (grass fed) stew beef (or chop some up)
2 large (28 oz) cans Eden Organic No Salt Added diced Roma Tomatoes
1 Large (28 oz) can Eden Organic No Salt Added Crushed Tomatos with Roasted Garlic and Roasted Onion
1 Can (14 OZ) Eden Organic Kidney Beans
1 Can (14 Oz) Eden Organic Black Beans
Chili powder to taste (I used one with no salt)
Powdered ancho chili if you'd like
cayenne pepper if you like some heat
Directions
Spray large soup pot with cooking spray and heat pan.
Once hot, add onions and garlic and green pepper along with 2t salt to season. (I also add chili powder here)
Sauté until fairly soft - you don't want to crunch into anything in your chili unless you add crackers or something ;-)
Add ground beef and another 2t of salt to season
While that's cooking . . . .
Brown the stew meat in another pan - you can season again here - salt and pepper to taste
Once the ground beef is cooked, add all the tomatoes and 2 of the big cans full of water.
Add Stew Meat once it's browned.
Set heat to medium or low to simmer
Once it's going for about 30 minutes, add the beans.
Simmer usually at least another 30 minutes.
I usually cover it for a while too so that not all of the liquid bubbles away.
I used all no salt added canned goods, if you use regular, I would recommend less added salt and, of course, that would be a difference in the nutritional info :-)
We also used grass fed beef, which tends to be very lean.
Makes approx 24 1-cup servings.
