Ingredients

    1/2 medium fresh tomato
    2 cups fresh spinach
    1 green onion
    1/3 cup canned black beans, rinsed and drained
    1 tbsp. fresh cilantro (coriander)
    1/4 jalapeno pepper
    1/4 medium red bell pepper
    1 oz. shredded Monterey Jack cheese
    1 tbsp. olive oil and vinegar dressing (light)

Directions

Rinse and chop tomato, bell pepper, onion, and cilantro; rinse and dice Jalapeno pepper. Rinse spinach well, spin or pat dry and coarsely chop. Set all vegetables aside. In a bowl, mix beans with cheese, cilantro, chopped tomato, jalapeno, bell pepper and green onion. Place chopped spinach on plate; top with bean mixture and drizzle with dressing. Serve.
