Ingredients

    1.5 cups whole wheat rotini pasta
    12 oz lean ground beef
    1 small can enchilada sauce
    1.5 cups mushrooms
    1 chopped onion
    1/2 chopped green bell pepper
    1-12 oz can whole kernel corn, drained
    1-12 oz. can diced tomatoes, drained
    1 tsp. garlic powder
    1 tsp. salt
    1/2 tsp. cumin powder

Directions

cook rotini according to package directions
brown onion, pepper, and mushrooms, remove from pan
brown ground beef
return veggies to pan
add cooked rotini to pan
add tomatoes, corn, and enchilada sauce
sprinkle with salt, garlic powder and cumin powder

simmer on low for 15-20 minutes

Makes about 6 1-cup servings
