Ingredients

1 bunch of spinach
1 can of diced tomatoes
1-2 garlic cloves sliced, depending on how much garlic you like
1 tbsp of Olive Oil
2 tbsp parmesan cheese
Salt & Pepper to taste
Directions
Serves 2 people
Heat the olive oil in a pan and add the garlic. Cook until aromatic.
Add the spinach and stir, coating with the oil. sautee for a minute or two.
Add the can of tomatoes, with the juice if you want a little bit of sauce with it.
Cook for another 5 or so minutes or until the spinach reaches the desired form of doneness.
Serve over rice or a baked potato and sprinkle with 1 tbsp of parmesan cheese.
Nutrition includes 1 tbsp of oil and 2 tbsps of parmesan cheese (one per serving).
