High in fiber, low in calories, filling and full of flavor!

Ingredients are give and take depending on taste and what's on hand. I rarely measure veggies, just tossing in however much I feel like adding.

Ingredients

    Beef Bullion - enough to make 6 cups (6 cubes)
    8 cups Water (more or less depending on how thick/thin you want the soup)
    1/2 cup chopped onion
    2 Carrots, peeled and sliced
    2 stalks Celery, sliced
    1 cup Cauliflower
    1 cup Broccoli, chopped
    1 small Zucchini, sliced into rounds or half-rounds
    1/2 cup Peas, frozen
    1/2 cup Corn, Frozen
    1 cup Spinach, fresh, chopped (more or less, it cooks down quite a bit - add more for increased folate and fiber)
    1/2 cup Green Beans, fresh
    1/3 cup sliced mushrooms
    1/3 CAN of Kidney beans (I freeze the rest to add to soup another day)
    1/3 CAN of Chickpeas (garbanzo beans)
    2 CANS Ready Cut Diced Tomato
    1 tbsp Italian seasoning
    * Ground beef, lean, 3 oz (remove)
    * Sweet potato, 1 cup, cubes (remove)

Directions

saute onions, carrots and celery till crisp tender. Add water and bullion, all vegetables and seasoning. Bring to a boil. Simmer till veggies are tender, about 30 minutes.

Enjoy!

Freezes well.
