Syrian wheat salad Syrian wheat salad
Number of Servings: 8

Ingredients

    1 cup bulgur wheat
    4 cups water
    1 cup finely chopped parsley
    1/3 cup finely chopped scallions
    3 red ripe tomatoes, cut up
    1 medium cucmber, chopped
    1/3 cup cilantro

    Dressing:
    1/2 cup fresh lemon juice
    1/4 cup olive oil
    1/2 t. garlic salt
    sm. amt. freshly ground pepper
    1 tsp. dried dill weed (or 1 T. fresh dill)

Directions

Soak bulgur in water until soft; drain well.
Chop all vegetables finely; stir into bulgur.
Combine dressing ingredients; pour over salad and mix well. Chill.

Serve on lettuce leaf or in pita bread.
Add Kalamata olives and/or feta cheese if desired.

Makes 8 1-cup servings.

    This is incredible! I soaked the bulgur in a non-stick pan and then returned it to heat to evaporate the remaining water. I added some red pepper, celery for more crunch. Delicious. - 8/12/08
