Introduction

Looking for a way to slim down banana bread, I added a carrot and 1 small honeycrisp apple. Also, I substituted 1/2 cup whole wheat flour, and added 1/2 cup Splenda for Baking, which wasn't listed as a choice. These aren't really beautiful as is, but you could help them out by putting some optional nuts on top. I would reccommend walnuts. Do not be fooled though, they are very delicious!

Ingredients

    4 large ripe bananas mashed
    1 large carrot, peeled and shredded
    1 small apple, I used Honeycrisp. pureed
    1 large egg, plus 1 egg white-beaten
    1 tsp. vanilla extract
    1 tsp. almond extract
    1/2 C. whole wheat flour
    1 C. all purpose flour
    1/2 C. brown sugar
    1/4 C. Splenda for Baking (white)
    1 & 1/2 Tbsp. melted butter
    1 t. baking soda

Directions

Fill the muffin tins a little over 1/3 full, otherwise, it's pretty simple!
I made these especially for my husband who is a breakfast skipper.
If adding nuts, which is not in the recipe- do so before adding the dry ingredients.
Add any flourishes you would like in spice, such as cinnamon, nutmeg, or pumpkin pie spice. I use a little cinnamon. These would also be great with some golden raisins or cranberries, but I just posted a basic recipe here.

Get a large bowl and add the bananas, pureed apple, and grated carrot.
Add almond and vanilla extract.
Add brown sugar and Splenda for Baking.
Add melted butter and mix.
(It is important to add the butter and mix before you add the eggs, as to not get bits of cooked egg in the mix, which is not tasty)
After mixing, add the beaten egg and egg white
Add 1 tsp bking soda
Mix well.
Add the whole wheat flour and all purpose flour. Mix to blend, but do not over mix.
Pour into prepared muffin cups and bake @ 350 for 25 minutes.
Please test these at 20 minutes as all ovens are different.
