Introduction
Delicious low carb, low fat (once it's skimmed) soup, or you can use it over rice, veggies or anything! can be frozen and must be cooked at least the the day before. Ingredients

1 jointed oxtail (beef tail)
1.5 litres of water
1/3 cup of med or dry sherry
1/3 cup of soy sauce (low salt is ok)
1 leek, sliced (2cups) (onions can be sub'ed)
1 cup sliced celery
1 tspn garlic
1" sliced ginger root (or powder can be sub'ed)
Directions
This delicious soup goes far. One lot will make at least 6 servings.
Add all ingredients to a pot, cover an bring to the boil.
Simmer until the meat falls off the bone (about 6 hours).
Remove from heat and remove bones.
Refrigerate overnight (this is important as it will allow you to hugely reduce the number of calories (amount of fat).
Scrape off the fat which will have all risen to the top.
The soup will have set (like jelly) this is from the gelatine in the bones, and will become liquid once heated.
It is delicious as a soup; served over rice or vegetables... anyhow! Can be frozen.
