squash,zucchini,eggplant squash,zucchini,eggplant
Number of Servings: 10

Ingredients

    4 cups sliced zucchini
    4 cups summer squash sliced
    4 cups eggplant cubed
    1 cup sun dried tomatoes diced
    8 tbs extra virgin olive oil
    8 tbs. shredded parmesean
    cooking spray

Directions

Add all ingredients in a bowl toss to coat, add more or less olive oil and parmesean to taste if desired.Put in casserole dish coated with cooking spray . Cook in 400 degree oven for 30-45 minutes or untill outsides of veggies turn brown.
