Introduction
This is a great alternative to tacos. You don't have the cheese or the taco shells, and you can choose to add the sour cream as a topping on each individual bowl, if needed. I use low-fat sour cream, and I like to use half ground turkey and half ground beef. This is a great alternative to tacos. Ingredients

1/2 pound, ground beef
1/2 pound, ground turkey
1 packet, taco seasoning
1 can, petite diced tomatoes
1 can, Ro-Tel
1 can, corn, drained
1 can, black beans, drained
1 onion, diced
3/4 cup, low-fat sour cream
Directions
Brown the beef and turkey in a pan, and drain. Combine meat, taco seasoning, tomatoes*, Ro-Tel*, corn, black beans, and onion in a large pot. Heat on medium until it starts to bubble. Then, simmer on low for about 20-30 minutes, until the onions soften a little, and the 'soup' is as thick as you would like**. Pour into bowls, and if you would like, top with a spoonful of sour cream or shredded cheese (cheese not included in nutritional info). Makes about 6 servings.
Variations:
*You can choose to drain your Ro-Tel and canned diced tomatoes, or not. If you drain, the texture is a bit more like chili.
**You can also add about a cup of water during cooking, to thin the mixture out a bit, into more of a soup texture. I personally prefer the thicker, chili version.
