Ingredients

Basil, 8 tbsp
Garlic, 3 cloves
Olive Oil, 2 tbsp
Pepper, black
Salt

Canned Tomatoes 16 oz
Mozzarella Cheese, part skim milk, 8 oz (
Directions
Preheat oven to 375 degrees
In a food processor, add drained tomatoes 4 tbsp of basil (1/2 cup if you have fresh leaves), olive oil and 1 clove of garlic. Pulse until smooth but some chunky. Season with the black pepper and salt.
Cut baguette into 1'' slices and toast in the oven for about 3 minutes until light golden brown. Quickly rub the other 2 cloves of garlic on the toasted side of each slice. Now place the mozzarella cheese on top. Put the bread back in the oven for less than a minute. Just long enough to melt the mozzarella slightly.
Remove from the oven and place one TBSP of the tomato mixture on top and enjoy =)
