Introduction

I use the sauce on fish too, it's really good...haven't tried it on beef though. I added fresh squeezed orange juice for this recipe. Put over brown rice. Ingredients

    Sauce:
    1/4 C low sodium soy sauce
    1/4 C balsamic vinegar
    1/4 C orange juice
    1/4 C water
    2 T honey
    2 T lime juice
    1 tsp ground ginger
    3 cloves garlic, minced

    Dish:
    2 boneless, skinless, chicken breast
    2 cloves garlic
    1 Stalk broccoli, chopped
    1 C chopped onion
    1 med red pepper





Directions

Cook chicken breast (sometimes I cut it in cubes or strips), onions, peppers and garlic in olive oil, season to taste with salt and whatever else you like...I use tarragon & ginger. Prepare the sauce while the chicken is cooking, then pour over the chicken & add broccoli.
Simmer for about 20 minutes. Serve over brown rice. You can vary the vegetables to your liking as well.
Serves 4.

    Very Good
    I cooked this tonight but doubled everything to feed the whole family. I'm thinking maybe I shouldn't have doubled the basalmic vinegar though. It was good, but the vinegar was much too strong. - 2/24/10
