Ingredients

Asian Vinaigrette:
1 Tbsp Dijon or brown mustard
1/2 Tbsp soy sauce
2 Tbsp rice vinegar
1/2 Tbsp (toasted) sesame oil
1/4 c. peanut oil
1 tsp sugar
Salad:
1/2 head green cabbage
1/4 head red cabbage
12 oz. grilled chicken strips
1/2 fresh cilantro leaves
1 can no-sugar-added mandarin oranges, drained
1/4 c. sliced almonds
Salt & pepper to taste
Directions
Put the vinaigrette ingredients in a small bowl and mix with a wisk. Set aside.
Cut cabbage into shreds and place in large bowl. Add cilantro leaves, oranges, almonds, salt and pepper. If chicken is cold, add 2 Tbsp of the dressing and warm in microwave. Add remaining dressing to salad and toss. Divide onto serving plates. Divide chicken and place on top of salads.
Makes 4 servings, approximately 3 cups each.
