Ingredients

    Beat the egg and keep separate.
    Spray non-stick pan with a dash of olive oil
    Chop in onion and defreezed Spinach.
    Stir fry until slightly tender
    Add choped ham and let is 'sweat' a little
    Poor in egg and seasoning - salt pepper
    Just before ready, add in cottage cheese
    stir it in.
    and voila!
