Ingredients

    1.25 lbs boneless skinless chicken breast, cubed
    1 cup Salsa
    1 Green Pepper, chopped
    1 cup frozen corn
    15oz can Black Beans, rinsed and drained
    1/4 cup Low Fat Shredded Cheddar Cheese
    Nonstick cooking spray

Directions

In a 10-inch skillet, cook cubed chicken in a skillet sprayed with non-stick spray for 3-4 minutes, until no longer pink in the center.

Combine chicken, salsa, chopped green pepper, corn, and black beans in a pot, and heat over medium-high heat for 8-10 minutes. (You can also add other veggies - mushrooms, broccoli, red pepper, and onions work well)

Once it is heated thoroughly, sprinkle the cheddar cheese on top and wait for it it to melt.

Tastes great on its own or on a tortilla or spanish rice.

Makes 4 servings.
