Introduction

Number of Servings: 4

Ingredients

    4 pork chops, breaded and fried
    1 cup onion, chopped
    1/2 cup bell pepper, chopped
    2 Tbsp. vegetable oil
    1 cup chicken broth
    1 can diced tomatoes with green chiles
    1 package spanish rice mix

Directions

Brown pork chops on each side. Add oil, onions and bell pepper. Cook for 5 minutes or until soft. Add chicken broth and let simmer.

In a separate pan, prepare rice according to package instructions, adding diced tomatoes. Once rice is done, add to pan with pork chops. Let simmer 10 minutes and serve.

Makes 4 servings of 1 pork chop and 1.25 cups of rice mixture.
