Introduction

Absolutely delicious! Who doesn't love potatoes and cheese? These either bake in the oven or can be done on your grill for a dinner time delight anytime of the year. If you don't like the vegetables listed, switch it up with your favorites.

Ingredients

    4 Medium white potatoes, peeled and sliced thin (do not mix all the potatoes together: keep each portion separate)
    1 cup chopped onions
    8 white mushrooms, sliced thin (2 per person)
    4 tsp. minced garlic
    4 oz. Cabot 75% reduced fat sharp cheddar, grated (it helps to keep each ounce separate)
    fresh ground pepper

Directions

How to prepare each individual potato wrap:

Take 4 long sheets of foil, about 18 inches long, and lay them on top of each other.

For first serving, spray foil with non stick cooking spray. Layer half the slices of one potato, sprinkled with desired amount of fresh ground pepper, 1/4 cup of onions, two of the mushrooms sliced, 1/2 tsp. garlic and 1/2 oz. cheese. Repeat layers. Spray lightly with the non stick spray over top and then bring foil up to fold down tightly. Fold in side seams so potatoes are sealed.

Repeat procedure for the remaining servings. Place on a cookie sheet.

Bake 450 for 20 minutes then turn down to 400 for 30 more minutes.

You may also preheat your grill to a medium heat and place wrapped potatoes directly on grill; close lid and allow to cook without burning until done.

Makes 4 servings.

This recipe is very low in sodium. If this is not a concern, salt each layer of potatoes to your liking as you do your layers. Enjoy!

    Excellent, loved it! Tasted great & minimal clean-up. Only quibble was it was hard to peel the potatoes off the foil, but the texture was wonderful-- crispy outside, moist inside layers. Can't wait to try other spice variations. - 9/4/13

    This has become a family favorite! Very easy to prepare and you can cater to each individual. In my family some like the works and others only like the cheese and this recipe made it super simple to make for each of them! We use this at least once a week! - 2/24/11
