Number of Servings: 32

Ingredients

    1 can Black Beans, rinsed and drained
    1 can White Shoepeg Corn, drained
    1 can Hearts of Palm, diced
    16 oz grape tomatoes, quartered
    1 Red Onion, diced
    3 tbsp Cilantro, chopped (or to taste)
    2 tbsp Extra Virgin Olive Oil
    Lime Juice, 2 lime yields (or to taste)

    *can also add some diced jalapeno for extra spice

Directions

Mix everything together and chill at least overnight to blend flavors.

Yields ~8 Cups or 32 1/4C servings
