Introduction

I had a sample of a simple salad at Whole Foods one day. It consisted of Romaine Lettuce, fresh apple chunks, shredded parmesan cheese, and lime vinegrette. So, I decided to recreate the dressing. My husband and I are addicted to this. Originally, I did not add salt, but later did because it tasted flat without it. I had a sample of a simple salad at Whole Foods one day. Ingredients

    1/4 cup Fresh Lime Juice
    1/4 cup Extra Virgin Olive Oil
    1/2 tsp of garlic powder (or 1 clove fresh garlic, crushed and minced)
    salt to taste

Directions

Mix ingredients well (I add all to an empty bottle and shake well).
Do not refrigerate because the oil and lime juice will separate and your EVOO will harden from the cold.
I have kept it at room tempurature with no problems. I generally make small amounts at a time.
