Ingredients
-
1 c. white flour
1 3/4 c. 100% Whole wheat flour
1 tsp. sugar
1/2 tsp. salt
1 1/2 tsp. Quick Active dry yeast
1 c. hot water (about 110 degrees)
1 egg white
1 T. water
Directions
You can use your bread machine or make in your mixer and kneed dough by hand or in mixer.
For bread machine add ingredients according to your machine's instruction using all ingredients except egg white and 1 T. water. Let it mix by selecting the Dough/Manual cycle and then remove from machine. Follow instructions below for rising and baking.
For mixer: add all dry ingredients and mix together. Attach dough hook and while mixer is running pour 1 c. hot water in slowly. Allow machine to mix and combine dough. If your mixer is powerful enough to continue kneeding then do that for about 8 minutes.
Bread machine or by hand kneeding: Kneed by hand on floured cutting board. Check dough to make sure it is not sticky. If it is add very small amounts of wheat flour until no longer sticky. Cover with plastic wrap and allow to rise in a warm place* for about 30 minutes.
Use custard cups or cereal bowls that are about 6 1/2" - 7" across. Grease the outside of 4 bowls with 1/2 tsp. of shortning each.
When dough is done rising, punch down and kneed briefly. Divide dough into 4 equal portions ( I lilke to use a scale). Roll or press with hand each portion into a 7 1/2" circle. Form over outside of bowls. Be careful not to let dough go over edge as it will be difficult to remove after it bakes.
Place bowls on large cookie sheet and allow to rise for 20 min. in a warm place.*
Beat egg white and 1 T. water in bowl and brush over dough (use a light touch).
Preheat oven to 375 degrees and bake for 15-20 minutes.
Make sure to carefully lift bread off bowl as soon as you remove from oven. It is very hot so use pot holders and a small knife to help pry loose. Let cool on a rack right side up.
Makes 4 - 1 serving bread bowls for soup or chili.
* I like to turn my oven on to 200 degrees for a few minutes until oven is warm and then SHUT off. Place dough in oven to rise.
