Introduction

This is a spicy, hearty chili. The ground beef can be swapped for ground turkey or an additional half cup of TVP. If you do not have TVP, double the meat. Add water if it become too thick. Use whatever beans (drained and rinsed) you have in house or omit them entirely. Do not omit the ground sage. Add salt and pepper to taste. This is a spicy, hearty chili. Ingredients

    1/2 lb lean ground sirloin (10% Fat)
    2 large carrots, peeled and coarsely grated
    1 green pepper (bell pepper), cored, seeds removed, and diced
    1 large onion, peeled and diced
    1 can goya beans (pinto, kidney, small red beans, etc), drained and rinsed
    1/4 cup chili powder
    1/8 to 1/4 tsp cayenne pepper
    1 to 2 canned chipotle peppers in adobo sauce, minced
    1/2 cup TVP (Textured Vegetable Protein - dry)
    1 (14.5 oz) can tomatoes, undrained
    1/2 tsp ground sage
    1 tsp oregano
    1 tsp pepper
    1/2 tsp salt
    2 cloves garlic, pressed
    2 cups water (or more, as needed)

Directions

In large saucepan, brown beef. Add onion. Cook until tender. Drain. Add garlic and spices. Cook 30 seconds or until garlic is fragrant but not brown. Add rest of ingredients. Cook 20 minutes (at a minimum) until green pepper and carrot are tender. Taste, and add salt and pepper. Can cook, simmering, for several hours if stirred occasionally.
