Ingredients

1 bag Shiritaki Noodles (8 oz)
2 oz. mozzarella cheese
1 egg
1 T. parmesan grated topping
6 oz. boneless chicken breast, chopped
1/2 c. mushrooms
1/2 tsp. chopped garlic
1/4 c. frozen peas
2 slices turkey bacon, cooked and crumbled
salt and pepper to taste
Directions
Use a strainer to rinse and drain noodles well. Pat dry. Microwave for 1 minute. Drain excess liquid. Dry thoroughly, using paper towels. Set aside.
Combine egg, parmesan and 2 T. water whisk until mixed and set aside.
Bring skillet sprayed with nonstick spray to medium-high heat. Add chicken, mushrooms and garlic to the skillet, and cook until mushrooms are browned and chicken is mostly cooked through, about 2 minutes. Add peas and cook until thawed and hot.
Add noddles and bacon to the skillet, with cheese and toss until mixed and hot. Reduce heat to lowest. Add egg mixture and toss with other ingredients. Add salt and pepper to taste.
