Introduction

With the carrots, this is a bit heartier than your basic vegetarian pea soup. With the carrots, this is a bit heartier than your basic vegetarian pea soup.
Number of Servings: 6

Ingredients

    1 package dry split peas (about 2 cups)
    1 med onion, chopped
    2 large carrots, peeled and grated
    1 cup of diced celery
    1-2 Tbsp minced garlic
    3 leaves Tarragon (or 1 tsp dry)
    2 tsp thyme


Directions

Peel and chop carrots and celery and put in food processor to grate. Chop onion and saute in olive oil until tender, adding garlic in last few minutes. Add carrots and celery and 3 cups water and bring to boil.

In the meantime, sort and rinse peas. When water is boiling, add peas and herbs and 3-4 more cups of water. Bring back to boil then lower heat. Simmer at least 50 minutes, until peas fall apart and tastes blend.

Makes about 6 big bowls.
