Ingredients

    * Water, tap, 4 cup (8 fl oz)
    * V8 Vegetable Juice, Low Sodium, 58 oz
    * Pea (Giant Brand) Petite, 87 gram (2/3 cup)
    * Mixed Vegetables, canned, 1.75 cup (or frozen)
    * Del Monte Diced Tomatoes, No Salt Added, 1.75 cup
    * Orzo Pasta, .5 cup dry uncooked
    * Wyler's Beef Bouillon Cubes 3 cubes
    * Garlic powder, 1 tsp
    * Paprika, 1 tsp
    * Onions, raw, 1 medium (2-1/2" dia) Chopped
    * Turkey, Ground turkey, 93% lean, 16 oz

Directions

Brown chopped onion and ground turkey at the bottom of the soup pot. Add 58 oz. low sodium V8 juice (I always drink a small glass, so it is never the whole container). Add 3 beef bouillion cubes and stir. Add mixed vegetables (canned or frozen), 2/3 cup frozen petite peas, 1 can Del Monte Diced tomatoes no salt added. Stir. Season with Garlic powder, paprika, pepper. I do not add salt.
Once this is cooking, add 1/2 cup dry orzo and stir. Let simmer on low heat for about half an hour. I typically let it simmer longer before we eat it, and it always seems to taste better the next day.
Makes about 18 1 cup servings (if liquid boils off, it will be less)
