Introduction

From The Garden of Vegan, I adapted this recipe by using butter instead of margarine (because trans fats are a no-no).
These cookies are a hit with my kids and not overly sweet.

Ingredients

    1/2 cup butter, softened
    1 banana, mashed
    1/4 cup unsweetened applesauce
    1 tsp. vanilla extract
    1/2 cup brown sugar
    1/2 cup flour
    1/2 cup whole wheat flour
    1/4 tsp. salt
    1 tsp. baking powder
    2 1/2 cups rolled oat flakes
    1 cup chopped walnuts
    1/2 cup dried fruit (I use chopped dates)

Directions

Preheat oven to 350 degrees. In a large bowl, stir together the butter, banana, applesauce, vanilla, and brown sugar. Add the flours, salt, baking powder, rolled oat flakes, walnuts, and dates. Dough will be stiff. Spoon a heaping tablespoon of dough onto a cookie sheet and press flat with your fingers. Bake for 12-14 minutes or until golden. Makes approximately 31 cookies. Serving Size= One Cookie.
