Introduction

Ingredients

    1 cup of All Purpose Flour
    .75 cup of Oat Bran
    .75 cup of Ground Flax
    3 medium apples finely chopped (use a food processor)
    .25 cup of raisons
    1 tsp of baking powder
    2 tsp of baking soda
    .5 tsp of salt
    2 tsp of cinnamon
    1 cup of 1% milk
    2 eggs
    1tsp vanilla
    .25 cup splenda
    .5 cup brown sugar
    .5 cup sunny boy cereal uncooked

Directions

Mix the flour, flax and oat bran and sunny boy. Add half cup of brown sugar and quarter cup of splenda. Add the chopped apples (peeled first) and raisons. Add the baking soda, baking powder and salt. Add the cinnamon. Add sweetner and brown sugar. Blend this up fairly well. In a seperate bowl mix the milk, vanilla extract and eggs. Pour the milk mixture over the dry and mix until just blended. I got 22 fair sized muffins out of this recipe. Bake at 350 for 20 minutes. Make sure the oven is preheated and you spray your pan or use papers. Refridgerate your muffins after they cool. These give 3.7 grams of fiber each and healthy fats from the flax.
