Number of Servings: 4

Ingredients

    1 Tbsp + 1 tsp salt (prefer sea salt)
    3 medium-sized cucumbers, sliced thin
    1 medium-sized onion, sliced thin
    1/2 cup sour cream (prefer full fat content for taste)
    1 Tbsp sugar (prefer raw cane)
    1 Tbsp lemon juice (fresh squeezed for best taste)
    Dash of black pepper
    1 tsp sesame seeds (optional)

Directions

Mix 1 tablespoon of salt with cucumber and onion slices; set aside for 15 to 20 minutes. Mix together remaining ingredients. Rinse the salted cucumber and onion in clear water; press out liquid. Stir in the sour cream mixture. Chill before serving.

No serving yield is suggested in this book, but I wouldn't recommend eating more than a quarter to half of it, as it's more of a dip than anything. I suggested the yield at 4 servings for this recipe.

    No problem at all; glad it's something you recognized. I'm a little alarmed at the sodium content, but other than that it's a sane-enough recipe for dieting I think.
