Ingredients

    1/2 block of extra firm tofu
    1 red bell pepper
    1 can artichoke hearts, drained (not packed in oil)
    1 sm can sliced olives
    8 oz dry rotini (I use Barilla whole grain)
    1/2 cup crumbled feta cheese
    4 tbsp olive oil
    juice of one lemon
    3 tbsp red wine vinegar
    2 tsp italian seasoning
    garlic powder to taste
    salt to taste

Directions

Cook pasta according to directions, drain and let cool. Chop the red bell pepper into bite sized pieces, then saute in 1 tbsp of the olive oil. Chop the tofu into bite-sized cubes. Mix the tofu, peppers, pasta, olives, artichoke hearts and feta in a large bowl. Make the dressing by mixing the remaining ingredients well in a small bowl. Add the dressing to the large bowl of ingredients and toss to coat. Makes about 5 lunch-sized servings, or more as a side dish.
