1.5 cups Wheat Bran
1 cup Skim Milk
.5 cup Unsweetened Apple Sauce
1 Banana, mashed
1.5 Tbsp Green Stevia
.5 tsp. Vanilla
.5 cups All-Purpose Flour
.5 cups Whole Wheat Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
.5 tsp. Salt
.5 cup Raisins
.5 cup Fresh Blueberries
Directions
Servings- 12 medium size
Preheat oven to 375*F. Line muffin tins with paper liners or grease well.
Mix together Wheat Bran and Skim milk and allow to stand for about 10 minutes.
In a large bowl, mix together applesauce, banana, stevia, and vanilla. Add to the Bran and Milk mixture. Stir in the Flour, Baking Soda, Baking Powder and Salt.
Gently fold in Raisins and Fresh Blueberries.
Fill Muffin tins almost to the top and bake for 15 - 20 minutes.
