Introduction

This is one of our favorite family recipes given to me years ago by my BFF Anni. The most time consuming part of this recipe is the slicing of the vegetables. This can be done ahead of time for a really quick dinner entre. Ingredients

    24 asparagus spears, cut diagonally into 1” spears
    ¼ c. water
    10 oz. lean boneless steak cut in ¼ “ strips
    ½ tsp. salt
    ¼ tsp. pepper
    4 scallions thinly sliced
    1 garlic clove
    24 cherry tomatoes halved

Directions

-cook asparagus and water in the skillet 3 minutes pour off water
-salt and pepper the beef, add to asparagus, then add scallions and garlic, and sauté until the beef is well done.
-add tomatoes, cook until soft, 2 minutes.
