Ingredients

    1 Recipe for Yellow Cornbread
    1 Packet of McCormick's Chicken Taco Seasoning Mix
    1 cup Non-fat Milk
    1 egg
    1 T EV olive oil
    1 t EV olive oil
    2/3 cup finely diced zucchini
    1/2 cup finely diced yellow squash
    1 cup finely diced red bell pepper
    1 cup diced roma tomatoes
    11/2 cup diced red onion
    1/2 cup frozen white corn
    1 T garlic
    1T cumin
    1T oregano
    1T red pepper flakes
    4 cups Shredded Chicken
    3/4 cup mozzarella

Directions

Oven Pre-heat: 425*
Boil and shred 4 cups of chicken.
Mix your dry cornbread mix together with the seasoning packet.
Then beat your egg and milk together and add with 1 T oil to mix.

Saute your veggies in a big pan in 1 t of olive oil adding garlic and herbs last.
Let your tomatoes cook down and add your chicken, stirring and letting the flavor get into the chicken.
Add salt to taste.
About 7 min.

Pour 1/2 of your cornbread mix into one large casserole dish or 2 smaller ones (one for freezing). Put in your chicken filling. Cover with the rest of your badder. Put your cheese on top.

Bake about 20 min

    Very Good
    The tamale casserole was very good, but too spicy. I would make again, but tone down the amount of red pepper flakes ~ maybe to 1 tsp. My family topped with a dallop of sour cream to cut the heat which was a yummy addition. Overall, very good dinner. - 8/24/10
