Ingredients

    1lb. dry penne pasta
    2lbs. fresh garden vegetables-your choice
    They used:
    1 small green zucchini
    1 small yellow zucchini
    1 large red onion
    1 red bell pepper
    1 yellow bell pepper
    1 small eggplant
    1 6oz. package of whole button mushrooms
    1/4 cup + 2TB. olive oil, divided
    1-2 TB. Pasta Sprinkle-from Penzey's Spices OR Italian Seasoning
    1/2 tsp. granulated Garlic, divided
    1/2-1 tsp. ground pepper
    1/4-1/2 tsp. salt
    1-2 TB Balsamic or Red Wine Vinegar

    1 serving = 1 cup

Directions

Cook pasta accordingly. And drain.
Cut up veggies, put on skillet/ grill. Add all other ingredients to marinate in veggies. Add to pasta and serve.
