Ingredients

    1 lb. Pork tenderloin
    2 Tbsp. Soy sauce
    1 lemon, juiced
    2 Tbsp. olive oil
    1 shallot, minced
    2 cloves garlic, minced
    1 bay leaf
    1 cup Bell pepper, chopped
    4 oz. liver, diced
    2 cups potatoes, diced
    2 cups tomato sauce


Directions

Cube pork and marinate with soy sauce and lemon juice for 1 hour and set aside, reserving 1 Tbsp of the liquid.

Heat half of the oil in a nonstick skillet, saute shallots and garlic for 1 minute. Add the potatoes and saute until almost done. Add bell pepper and saute until crisp-tender. Remove veggies and set aside.

Heat remaining oil and brown pork and liver pieces and cook through. Return veggies to pan with raisins and add tomato sauce. Bring to a boil and reduce to a simmer. Add bay leaf, cover and simmer about 20 minutes.

Salt and pepper to taste. Serve with rice or bread if desired.
