Ingredients

    2 eggs
    0.75 oz smoked salmon (lox) - nova lox has less salt
    1 oz cheddar cheese
    1.5 Tbsp chopped onion (you may wish to caramelize them first if you don't like raw onion)
    non-stick spray for pan

Directions

In a medium-sized bowl or cereal bowl, lightly scramble two eggs until mixed. Spray frying pan with non-stick spray. Pour eggs into heated pan and add cheese, onions, and lox. Cook until bottom portion of eggs are set, then flip half the omelette onto itself. Cook for a few minutes then flip omelette to the other side and cook for a few more minutes, or until eggs are done. That's it!

    this real good you get your omega 3 with out have a fish taste yes its high in sodium but i will keep for the day my sodium is low cant bet the fact this help fight canser - 4/30/10
