Ingredients

    4 boneless, skinless chicken breasts
    1/2 tsp salt and pepper divided
    4 Tbsp dijon mustard
    2 Tbsp honey
    1 minced shallot
    1 Tbsp thyme
    1 pound Small Red potatoes
    Olive Oil cooking spray

Directions

Preheat oven to 375.

Sprinkle chicken with 1/4 tsp salt and pepper. Place in a 13X9 pan sprayed with Pam. Combine mustard, honey, shallot, and thyme in a small bowl to form a paste. Spread over chicken, covering completely

Add potatoes to the pan and spritz with spray. Sprinkle potatoes with seasoning of choice.

Bake about 50 minutes stirring potatoes once. Chicken is done when juices are clear.

    Incredible!
    I made this for a second time today, using shallots instead of onion and garlic (see previous comments). I turned out great! FYI, I used an Italian seasoning blend instead of thyme. - 9/4/11
