This is actually a main dish, but didn't have the option. Great for morning gatherings or brunch potlucks! Prepare the night before. Refrigerate. Bake in morning. Ingredients

6 slices whole wheat bread
2 T Olivio Spread w/Olive Oil
1 1/2 cups shredded cheese (cojack)
2 c skim milk
4 large eggs
1/2 teas ground mustard
salt & pepper (to taste)
additional toppings to taste
Directions
Prepare a 9X13 baking dish (not aluminum) with non-stick spray. Spread each piece of bread with thin layer of Olivio spread (or less), and place in baking dish covering the bottom. Sprinkle the cheese on top of bread. Set aside.
Scramble the eggs, add milk and ground mustard. Mix well making sure the mustard is dissolved. Pour over bread. Sprinkle with salt and pepper if desired. Add additional toppings such as bacon, sausage, green peppers, onions, etc. if desired. Be sure to add the nutritional values for the additional toppings. (Different cheeses add different flavors - some people have used colby or cheddar cheese)
Cover with foil. Refrigerate 8 hours, or overnight.
Bake in 325 oven for 1 hour.
Cut as per piece of bread and then in half for 12 servings.
