This rice side dish is healthy and pretty. Don't be fooled by the name...it is delicious!
Number of Servings: 4
Ingredients

1 cup of brown rice
1 onion (diced)
1/2 cup of diced carrots
1/4 cup of chopped (fresh) cilantro
1/4 cup of sliced almonds
1 tbsp of ground ginger
1 tsp of red pepper flakes
1 tsp of salt
2 cloves of garlic
1/4 cup of water
Directions
cook rice in a steamer or rice cooker according to directions (don't use minute rice)
saute carrots, onion and garlic in water on med high temp. until tender and water has evaported. Mix in steamed rice and spices. Add cilantro and almonds last...careful to not overstir. Makes approx. four 1/2 cup servings
