Introduction

Just a random soup we made tonight with the veggies we had left over. You'll find the cabbage makes this soup very filling while not being terribly high calorie. Ingredients

    Meatballs:
    Jennie-O Ground Turkey 16 oz
    1/4 cup bread crumbs
    1/4 cup Parmesan cheese
    (I seasoned these to taste with Italian Seasonings - 2 TBSP)

    Soup:
    Onion One large white
    Celery 4 stalks cut up
    Idaho Russet Potatoe (just one cut into 1inch slices)
    1/2 a head of cabbage cut into 1-2 inch pieces. This will look like a LOT of cabbage but it renders down.
    Carrots 3 cut into pieces
    Minced garlic to taste (I like a LOT of garlic)

    Side:
    Brown Rice 2 cups uncooked

Directions

I start the onion first on my fire. Getting out my large soup pot (about 8qt) I added 2 tsp of the Smart Balance Light, 2 Tsp Extra Virgin Olive Oil, and put in my onions. Depending on your stove I do this about a 4 (med heat).

While that is cooking I make my meatballs, mixing the meat, cheese, bread crumbs and some seasonings.

Once the onions start to look translucent, I added the celery. Cook that until the onions are completely clear.

Brown the meatballs in a skillet.

Now that the onions are clear - add water until your pot is 3/4 the way full. Add potatoes and carrots. Add minced garlic, and add Better then Bullion Chicken. Turn your heat up until you get a rolling boil.

Start your rice.

I also added some "chicken seasoning" and Mrs. Dash Table spices. Basically seasoned this to taste. I love random mixed spices. I just throw a bunch of different ones in there. Have fun!

Once the potatoes have softened you will add the cabbage and meatballs. Cook until the cabbage is desired softness.

Serve over the rice (little over a half cup of rice per bowl) :)
