Pork Tenderloin (1 1/2 - 2 lbs)
6 - 8 Medium Carrots (sliced)
2 Medium Onions
1 can Low Fat Cream of Mushroom Soup
1 packet Lipton Onion Soup Mix
1/2 Cup water
2 Cups Cauliflower
Directions
Preheat oven to 350 degrees.
Place Pork Tenderloin, Carrots, and Onions in 9 x 13 baking dish. Mix Cream of Mushroom soup, Lipton Onion Soup mix, and water together and pour over pork and vegetables. Cover with aluminum foil and bake for 90 minutes. Serve with steamed or mashed cauliflower. (You can add potatoes to the roasting pan, but it will greatly increase the number of carbs).
