Ingredients

    5, 3oz pork chops (brined, optional)
    3 apples
    4 packed tbsp brown sugar
    1 tsp crushed red pepper
    1 tsp ground cumin
    1 tbsp pumpkin pie spice
    1 tbsp olive oil

Directions

Brine pork chops in equal parts apple cider vinegar and water, sea salt, red pepper flakes, brown sugar, herbs de provence (herb mix) and bay leaves for at least 2 hours.

Peel and slice apples then toss with brown sugar and pumpkin pie spice.
Layer apples in the bottom of your baking dish
Massage olive oil cumin red pepper (and any other spices of your choice) into pork chops
Lay pork chops onto the bed of apples
Bake in preheated 425F oven for 45 minutes
Turn half-way thru cooking
Watch to make sure you don't over-cook - you don't want dry pork!

I served my chops with baked sweet potatoes
