Introduction

Ingredients

    1 T olive oil
    2 C. chop onion
    1 C. chop celery
    6 cloves garlic
    2 C. carrots
    2 C. summer squash
    2 C. green beans
    2 C. cabbage
    2 blocks vegetable bouillon
    8 cups water

Directions

Saute' the onion, celery and garlic in the olive oil. When onion is clear add water, carrots and bouillon. Cook simmering until carrots are crisp tender then add squash, green beans and cook until they are crisp tender. Add cabbage and cook for 5 or 10 minutes more until it is crisp tender.

Makes 8 to 12 servings.

The quality of this soup is directly related to the freshness and quality of the ingredients. Look for tender young vegetables at your farmers market or even better grow your own.
