Ingredients

1 3/4 cups white flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
½ cup unsweetened applesauce
½ cup white sugar or sugar substitute
1 Tbsp vegetable oil
1 egg
1 cup fat-free sour cream
1 lemon, juice and zest
Icing:
2 cups icing sugar
1 lime, juice and zest
warm water
Directions
Preheat oven to 180˚C. Combine dry ingredients and set aside. Whisk together applesauce, oil, and sugar.
Add egg and beat well, then stir in lemon zest and juice. Alternately stir in flour mixture and sour cream in stages, then divide among 24 paper-lined muffin cups.
Bake 15 - 20 minutes or until toothpick inserted in the center of one cupcake comes out clean.
To make the icing:
Mix the icing sugar, lime juice and zest, add a tiny bit of warm water (not too much the icing must not be runny). Pour this into the cases to top. Sprinkle with yellow and green sugar crystals if you can get hold of them.
