Originally from www.amysfinerthings.com, I tweaked it by adding some things from other waffle recipes I saw. I made my waffles on a 7 inch circle waffle iron & made 12 waffles. Ingredients

1 1/2 cups whole wheat pastry flour
1 cup white flour
1 1/2 Tbsp baking powder
1 tsp baking soda
1 tsp salt
3 egg yolks
1 tbsp vanilla
2 1/2 cups skim milk
2/3 cup melted butter
3 egg whites
Directions
1. In a large bowl, combine flours, baking powder, baking soda, salt, sugar & cinnamon.
2. In a separate bowl, beat egg yolks slightly. Mix with vanilla, milk & melted butter.
3. Add wet ingredients to dry and stir just until combined.
4. Beat egg whites until stiff peaks form. Fold egg whites into batter, leaving a few fluffs. Do not overmix.
5. Cook as directed on your waffle iron.
I made my waffles on a 7 inch cirlce waffle maker & made 12 waffles, so your waffle maker might make more or less.
The original recipe only had 1/4 tsp of salt and no sugar, so feel free to omit them if you need to!
