Ingredients
-
2 large onions
2 packages Tofu (I use the 1 pounders but any brand)
3 Tbls or more soy milk
5 cups seasoned bread crumbs
4 cups quick oats
2 cups crushed saltine crackers
2 cups chopped pecans
2 packets Good Seasons Italian Dressing Mix
2 cups cooked lentils
1 cup cooked rice (long or short grain-white or brown)
Directions
Preheat oven to 350 degrees F
makes about 32 patties - 1 pattie per serving
Blend tofu, onions and 3 Tbls soy milk until smooth.
Mix all other ingredients together then add blended ingredients. Shape in to patties 3-4 inches in diameter.
Lightly spray a cookie sheet with cooking spray and place patties on it. Bake 30 minutes at given temperature until golden, turning patties over after the first 15 minutes.
Patties may of course be fried in olive or grape seed oil instead of baking.
These burgers do well made ahead of time and kept in the freezer.
