Introduction

This is amazing for topping crostini or serving alongside crudites, but it's also delicious as a sandwich spread with slices of cucumber, red onion and sweet pepper! Ingredients

    1 1/4 cups canellini beans, drained and rinsed
    1-2 tbsp bean liquid (or water)
    1 clove garlic
    1 green onion, minced
    4 oz fat free cream cheese
    1/2 cup non-fat plain yogurt
    1/2 tsp dried basil
    1/2 tsp dried oregano
    1 cup (8 oz) canned artichoke hearts (packed in water), drained well and diced
    1 tsp lemon juice

Directions

In a food processor, puree beans with enough of the bean liquid or water to make a thick paste.
Add garlic and green onion, puree completely.
Blend in cream cheese, yogurt and dried herbs.
Pulse in artichoke hearts and lemon juice until mixed, then transfer to a bowl or serving dish and chill before using.
