This is a healthier version of an egg salad sandwich. The calories are just for the filling, not the bread or toppings. The 20 minute cooking time is to boil the eggs, though they should be cool or cold when making the sandwich filling.

Ingredients

    4 hard boiled egg white
    2 hard boiled egg
    1/4 cup plain, non-fat yogurt
    1 TBSP dijon mustard
    2 TBSP capers, drained

Directions

Makes 3 good-sized sandwiches or 2 large. Nutrition info is for filling for 3 sandwiches (no toppings or bread).

Hard boil the eggs, discard the yolk from four of the eggs. Chop or grate the eggs, add all other ingredients and mix well.
